Ce Choco Show Cooking fut un beau challenge, l'occasion de mettre en lumière encore plus sa créativité à partir du Foie gras...dans son univers du CHOCOLAT réinterprété dans le salé.... Particulièrement à partir de son savoir de Chocolatière en développant d'autres saveurs avec ses talents de cuisinière. Des tonalités étonnantes et savoureuses de fleurs et de fruits, dues à ses origines des Philippines, avec un alignement sur le produit pour le bonifier avec des accords raffinés.

Les 2 CANAPES

Canard col vert au chocolat à l'orange avec 2 interprétations sur un pain au cacao et un autre à la truffe. La viande snackée et le petit pain aussi dans un jus d'orange ou avec son zeste et du chocolat.

 

LE PLAT

Balade du goût au coeur du gibier avec la pomme dans tous ses états, du chevreuil au faisan, un lien savoureux au gras du foie gras au beurre de vanille de Madagascar à celui du Yuzu. 

Une harmonie délicate avec des accords entre chaque gibier, relié du cacao en grué au chocolat en sauce. Sans voir une sensation de gras, tempéré par l'acidité de la pomme, un voyage gustatif du monde animal en sauce, des beurres aromatisés au foie gras de canard, au beurre végétal de cacao.

 

 



TONET is a creative women and she develop her experiences with the heart first and in fact, it is the most important!

 

But she is  a very good chocolate maker and cook as well, She astonish you with her Foie gras chocolate Macaron. She loves her work and make her chocolates as precious jewels, always with quality and tasty. Her Philippines origin brings a sort of travel coming from the ganache aromas, giving a new harmony of each chocoate by the choice of rare flower and fruit

 

She was in Passadena at chocolate Luxury Exhibition in Los Angeles in september 2014. You could see marvelous,chocolates, simple and classic appearence but at the end in the mouth a force of taste in your memory  that you never forget at the end of the tastings!

Marti Chocolatt was awarded Best Chocolatier in America in 2012

 

and 2013 by International Chocolate Salon

 

Marti Chocolatt was born from a sweet dream of a young chocoholic from the Philippines. It was in 2006 when Tonet Tibay decided to pursue this venture after returning from a chocolatier training and internship in France. The theme was to incorporate her Philippine heritage with the finesse and sophistication of the French way of making chocolates and confectionery, Le Nôtre Thierry ATLAN... 

 She developed her own niche and style in the chocolate world by incorporating influences from her Philippine heritage with traditional French techniques of making chocolate and confectionary.

 

Tonet Tibay of Marti Chocolatt began with offering unique pieces such as Buko Pandan, Mango Caramel, Durian, Kalamansi, and Ube chocolate.  These were presented to clients at events and salons earning awards and recognitions from chocolatiers, artisans and food critics in the United States. 

 

Based in Los Angeles and with access to California’s rich agriculture and cultural diversity, Tonet is able to continually experiment and develop new pieces with the best quality ingredients.

 

Tonet loves to travel and explore different cultures and food, creating a repository of experiences and memories that she likes to reflect in her chocolates.. What started out as a chocolate venture has now grown to making other confections and dessert,most of which are  chocolate themed.
